This easy Thai chicken recipe feeds 4 adults as a main meal, no problem. Your family will love this peanut chicken so much, they’ll ask for it every week. Delish chicken in just 20 minutes!
Serves 4
2 tblsp rice bran oil
1 onion, sliced into wedges
2 teaspoons crushed fresh garlic
2 teaspoons curry powder
600 gms Tegel chicken fillets, cut into strips
1/4 cup Airborne runny honey
1/4 cup Ceres Organics crunchy peanut butter
Sugar snap peas
1/2 cup chicken stock
1/2 cup Ceres coconut cream
Steamed rice and or Pane Toscano Italian crusty bread to serve.
Coriander to garnish
How to:
Heat oil in pan, and add onion, garlic and curry powder.
Cook for 1-2 minutes or until the onion is lightly browned. Add chicken strips and cook for 4-5 minutes or until chicken is cooked through.
Add honey, peanut butter, stock and coconut cream.
Combine well.
Simmer for 10-15 minutes until sauce is thick.
Add in sugar snaps peas, 5 minutes before serving.
Serve with rice and crusty bread and garnish with fresh coriander from your Herb Station.
