This will become a favourite pasta recipe. So fast and amazingly delicious. Like Mama would have made it in Italy. Takes just 20 mins to prep, the same to throw together and voila – a creamy, authentic, cheesy tortellini. Scrummy.

Cheese Tortellini With Pesto Genovese, prosciutto and pine nuts

Ingredients:
250g Barilla Tortellini
190g Barilla Pesto all Genovese
50g pine nuts
30ml extra virgin olive oil
100g prosciutto, cut into thin strips
White pepper to taste
Method:
Bring a large pot of salted water to the boil, add the Barilla Tortellini. Whilst the pasta is cooking, toast the pine nuts gently in a large frying pan, then remove. Heat the oil in the pan, fry the prosciutto for 2 minutes. Drain the tortellini and add to the pan. Add the Barilla Pesto Genovese, combine for 1 minute away from the heat. Serve the tortellini with a pinch of white pepper and toasted pine nuts to taste. For a delicious alternative, replace the pine nuts with roughly chopped walnuts.
